  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions
 

Marinate:

  • In a bowl, cover 2 pounds of chicken necks with 1 cup of buttermilk. Refrigerate for at least 1 hour (or overnight for better flavor).

Prep the Coating:

  • In one shallow bowl, mix:
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1⁄2 teaspoon black pepper
  • In another bowl, put 1 cup of breadcrumbs.

Coat the Chicken:

  • Remove the chicken from the buttermilk, letting excess drip off. First, dredge in the flour mixture, then dip back into the buttermilk, and finally coat with breadcrumbs.

Heat the Oil:

  • In a deep skillet, heat enough vegetable oil for frying to about 350°F (175°C).

Fry:

  • Add the coated chicken necks in batches. Fry for 5-7 minutes on each side until golden brown.

Drain:

  • Use a slotted spoon to remove the chicken and place it on paper towels to drain excess oil.
